Sweet Potato Breakfast Bowl

This breakfast bowl is packed with tons of vitamins and nutrients.  It’s perfect for those types of mornings when you’re rushing out the door. The roasted cinnamon sweet potatoes make for both sweet and savory cravings. I know cinnamon sweet pots seem weird for breakfast especially with Forager Project unsweetened cashew yogurt. BUT the yogurt is super light and has a subtle flavor that pairs perfectly with roasted cinnamon sweet potatoes. You definitely gotta try it : )

Directions

Roasted Sweet Potatoes

  1. Preheat oven to 400
  2. Slice sweet potatoes into fry slices
  3. Place parchment paper on cooking sheet 
  4. Spray your sweet pots with avocado oil and sprinkle cinnamon
  5. Bake for 30-40 minutes whenever fries are crispy

Bowl 

  1. Add in yogurt, berries, sliced banana, and sweet potato fries
