Breakfast is my all-time favorite meal. Especially on the weekends when I have time to make breakfast and not rushing out the door eating my oatmeal in the car. This sweet potato hash is a great alternative to potatoes or hash browns. You can either scramble or make an over easy egg to go with the sweet potato hash. I chop the sweet potatoes into small cubes and add black pepper and Himalayan sea salt for seasoning. Bake on 400 for 20-25 minutes. While they are baking, sauté onions in a saucepan then add in the sweet potatoes and cook for 15 minutes. I promise you, this will keep you nice and full.
Ingredients
- ½ sweet potato
- 1 cup chopped white onion
- avocado oil
- pepper
- Himalayan sea salt
- 1 Vital Farms egg
Directions
- Preheat oven to 400
- Chop sweet potatoes into cubes
- Place on parchment paper w/ avocado oil, pepper, and Himalayan sea salt
- Bake for 15-20 minutes
- Take out of oven and in medium size skillet add in chopped onions and sweet potatoes
- Cook for 15 minutes
- Set aside to cool and cook over easy egg to place on top of the mash
