Sweet Potato Hash

Breakfast is my all-time favorite meal. Especially on the weekends when I have time to make breakfast and not rushing out the door eating my oatmeal in the car.  This sweet potato hash is a great alternative to potatoes or hash browns.  You can either scramble or make an over easy egg to go with the sweet potato hash.  I chop the sweet potatoes into small cubes and add black pepper and Himalayan sea salt for seasoning.  Bake on 400 for 20-25 minutes. While they are baking, sauté onions in a saucepan then add in the sweet potatoes and cook for 15 minutes. I promise you, this will keep you nice and full.

  1. Preheat oven to 400
  2. Chop sweet potatoes into cubes
  3. Place on parchment paper w/ avocado oil, pepper, and Himalayan sea salt
  4. Bake for 15-20 minutes
  5. Take out of oven and in medium size skillet add in chopped onions and sweet potatoes
  6. Cook for 15 minutes
  7. Set aside to cool and cook over easy egg to place on top of the mash
