Ingredients
- ¼ cup of coconut flour
- 2 Vital Farms egg
- 1 banana
- ¼ cup Artisana Cashew Butter
- 2 Tbsp Bob's Red Mill Ground Flax
- 1 Tsp Bob's Red Mill Organic Rolled Oats
- 1 Tsp Frontier Co-op Vanilla Extract
- 1 Tsp baking powder
- 1 Tsp Simply Organic Cinnamon
Sauce
- 1/3 cup raspberries
- 1/3 cup blueberries
- 2 Tbsp Artisana Coconut Butter
- 2 Tbsp coconut oil
Directions
- Add all ingredients into a blender for 1 minute
- Heat saucepan of medium low and add in coconut oil
- Drop batter (i use 1/4 cup) in pan and turn on low heat.
- Cook for 2-3 minutes each side- or when pancakes start to bubble
