Banana Muffins

It’s always important to treat yourself.  Cheat meals help us stay on track, since after indulging you always want to get back into your routine.  Plus, it's always exciting to add in treats, something sweet, and these muffins are the perfect way to do so. If I could, I would bake all day long, especially anything with bananas and oats.  I’ve been making these muffins for years and they have yet failed me.  I usually switch up the ingredients each time but they always turn out perfect.  You can always add chocolate chips if you’re craving something a little extra sweet.  These banana muffins are always a hit. They are super fluffy and moist, with basic ingredients, and are absolutely delicious.

Ingredients

  • 2 bananas
  • 2 eggs
  • 3 tbsp coconut oil
  • ¼ coconut sugar
  • ½ cup coconut flour
  • ½ tsp baking soda
  • ½ tsp baking powder
  • dash of cinnamon

 

Directions

  1. Preheat oven to 350
  2. Sift together the flour baking powder, baking soda, cinnamon; set aside
  3. Combine bananas, coconut sugar, eggs, and melted coconut oil in large bowl.
  4. Fold in flour mixture, and mix until smooth
  5. Scoop into muffin pans using ¼ cup
  6. Bake in preheated oven for 10-15 minutes (small muffins) and 20-25 minutes (large muffins)
